Day 5

If you are paying attention, you may have noticed that I’m writing about Day 5 on Day 6. It’s not because I didn’t cook—in fact, I made three separate dishes yesterday. The occasion? It was my husband’s birthday—and what would a birthday be without good food, friends and family, and some tasty beverages. Needless to say, I didn’t feel like writing after the evening came to a close.

Although there are more than 30 recipes in the “August” section of Cooking Light Annual Recipes 2014, picking something for my husband’s birthday dinner proved challenging. In the end, I chose two side dishes from the August section, but went back in time to a few monthsIMG_0191 to June for the main course. Normally, making three separate dishes would be both time-consuming and a little frustrating for me. Fortunately, each side dish took less than 10 minutes to make. First, I made “Tequila Slaw with Lime and Cilantro“—my pictures doesn’t do it justice at all, as it was fantastic (Cooking Light’s photo is much better!). Because the recipe only called for a few basic ingredients, I was able to make it exactly as written—for a change! I’ll be honest, I don’t normally like coleslaw—I never eat it when it’s offered in the diner—so I wasn’t certain that I would actually like this side. I could not have been more wrong! I think it may have even been everyone’s favorite of the evening. I’ll definitely be making this one again.

IMG_0189The other side dish wasn’t nearly as exciting, but it was easy, and still quite tasty—”Greek Salad Cucumbers.” I didn’t intentionally ignore the instructions in this recipe, but as I was having a drink and chatting with my guests, I inadvertently cut the cucumbers the wrong way, and although I had the fresh dill, I forgot to add it! All in all, it was a simple and refreshing dish.

The final thing I made was the main course, and technically it shouldn’t be shared on Day 5 as it wasn’t from the month of August. BUT, because it was not only simple and delicious, the sauce that topped the vegetables was outstanding, and I think it should be shared—and possibly, made—by all of you. It was called “Grilled Chicken with Tomato-Avocado Salad“—delicious! IMG_0188If you do decide to make it, don’t be intimidated by the long list of ingredients—it truly is simple to make. When I make it again, I will definitely double the amount of vegetables, and make some extra sauce, as no one could get enough of it, and I think at least a few of us even thought about licking the bowl.

It’s now 4:00, I had better decide what to make for Day 6! [Sigh]
